Process your corn porridge (PAP) yourself
Corn porridge popularly called Pap, Ogi or Akam as the case may be is one of the commonest porridge consumed by many homes. It can be used to take many kinds of foods; bean cakes (Akara), bread, bean pudding (moi-moi), bean pottage and others. You can as well take it alone, some do that. Corn porridge is not just an easy pottage to prepare but also to process, knowing how to process your own corn porridge could save you some costs financially and health wise. Financially because it's cheaper than buying from people who sell on the streets to make profits; health wise because you would be more careful during processing, the tools you'll be using would be kept clean, the water shouldn't be left out too, it's what your households are consuming so the level of hygiene to be maintained should be top notch.
Know that you could mix corn with other cereals like joro, millet, sorghum if you wish but in this article, we'll be using only corn. Note that the addition of other millet makes it more nutritious, if you decide to include sorghum in your combinations, please it should have the lowest ratio because of its low coagulation rate, corn should have the highest ratio in that case. So Let's get down to it already.
- Sort your corn to remove all forms of diets and stones
- Soak in a rubber container with lid for 48 hours to ferment, add water to cover the corn, then cover the container with its lid.
- After 48 hours, wash out from water, wash for additional three times.
- After washing, take it to the grinding house to grind, grind for three times to be thorough.
- Get a clean sieve, ask for pap sieve in the market, you'll be shown.
- Sieve it with clean water till they're all finished. Use a large bowl that could contain everything for this.
- Carefully remove the sieve and cover the large bowl
- Leave to stand for 6-7 hours then decant the water on top
- The Pap is below the water, tie them in nylons and preserve with refrigerator.
